Job Summary & Purpose
Operate assigned machinery and equipment safely, efficiently, and economically and as per Gandour’s Standard Operating Procedures.
Scope
People Regularly interacts with employees from other Sections in the Manufacturing Department.
Responsibilities / Key Accountabilities
Oven Operator
• Conduct pre-heating of equipment prior to baking operations.
• Follow the standard operating procedure including correct oven parameters.
• Start baking operation on scheduled time as instructed by Station Leader and/or Line Supervisor.
• Ensure that no dough enters the oven unless standard temperature is attained.
• Check Product weight, thickness, standard length, width, and other dimensions every 10 minutes.
• Report to the Station Leader and/or Line Supervisor any defective equipment.
• Auto brush the oven band and wire-mesh transfer conveyor after operation.
• Manually crank the oven wire band drive in case of power failure.
• Maintain the cleanliness of equipment and surrounding areas.
• Ensure that main gas valves and oil supply lines are closed after operation.
• Conduct pre-cooling of oven prior to shutting off.
Dough Mixer
• Provide a continuous supply of mixed dough at given time intervals.
• Ensure that dough contains no foreign matters that will affect its quality.
• Ensure that the Tub and utensils used are clean.
• Add the right type and proper amount of dough scrap or biscuit meal to the fresh mix.
• Record all scrap leftovers and usages.
• Ensure that the equipment and surrounding areas are clean at all times.
• Report any needed materials to the Line Supervisor.
• Monitor equipment performance and report any malfunctions and/or deviations to the Line Supervisor.
• Prepare the Mixing report.
Feeder / Packer
• Prepare, clean, and sanitize all tubs to be used at mixing section.
• Assist in hauling of filled dough tubs to their respective areas.
• Assist in feeding of mixed dough or dates jam into hoppers.
• Maintain cleanliness and orderliness of his designated area.
Wrapping Machine Operator
• Ensure that machine is properly set at right parameter and all auxiliaries are in working order prior to startup.
• Ensure that machine operates continuously and efficiently and at the same time checked if wrapped products are within standard.
• Report to the packaging Line Supervisor any needed materials for wrapping.
• Record all data pertaining to the production run e.g. Biscuit rejects (package waste), wrapper usage, wrapper yield, and machine efficiency.
• Ensure that the equipment and surrounding areas are clean at all times.
• Monitor equipment performance and report any malfunctions and/or deviations to the Line Supervisor.
• Prepare the packaging report.
Cutting & Laminating Machine Operator
• Set the standard parameters of the following:
– Laminator
– Gauge roll
– Waving web speed
– Rotary mold speed
– Transfer web speed
• Start operation on scheduled time as instructed by leadsman.
• Measure the standard dough weight before running it into the oven and Check / Result record weight every 10 minutes.
• Maintain the continuous flow of the product.
• Report any defective machine or parts for repair to the leadsman.
• Perform minor adjustments or repairs with direction of the Engineering Department.
• Ensure that the equipment and surrounding areas are clean at all times.
• Ensure that off-standard product or scraps do not enter the oven.
• Coordinate with the mixer in case of machine breakdown that would entail delaying production.
• Record dough left -over, sweepings, salt, and sugar usages.
• Prepare cutting report.
