Butcher – Prime Support – Iraq

JOB SUMMARY:

Responsible for the full running of the butchery department in consultation with the Head Chef, Catering Manager or Camp Boss/Manager. Train and supervise the junior staff in the department. Participate in practical tasks of butchery preparation and presentation as per PSGS’s policies and procedures.

KEY RESPONSIBILITIES:

 Applying and following the contractual obligations, PSGS’s policies and procedures

 Following, implementing and maintaining all ISO and HACCP standards and requirements

 Providing guidance and training, including setting performance standards and monitoring performance

 Organizing the daily tasks of the butchery team to prioritize, organize, and work together to accomplish set tasks

 Estimating in consultation with the Head Chef the requirements and requisition meat supplies to maintain inventories

 Coordinating with the stores’ management team to follow the availability of various food items

 Receiving, inspecting and storing meat and meat products according to PSGS’s food safety requirements to ensure meat quality

 Determining and maintaining food costs in consultation with the Head Chef while adhering to set budgets

 Ensuring safety training and proper usage of equipment’s and premises is given to junior and untrained staff

 Leading the team positively for the development of the enterprise

 Act as a food safety team member

 Performing other duties as directed
